The star history chart was broken because of restrictions on the GitHub stargazer API. Updated the link in the README to a working chart so contributors can still see how the project is growing.

The star history chart in the README was broken due to restrictions on the GitHub stargazer API, so people could no longer see it. This updates the chart to a working alternative that keeps the same view of the project's growth. Please merge so the chart works again.
